Creamy Cajun Parmesan Pasta Sauce
Ingredients
- 12 oz (340 g) pasta
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1 1/2 teaspoons Cajun seasoning
- 3/4 cup heavy cream
- 1/2 cup grated parmesan
- 1/2 cup reserved pasta water, as needed
- 1 tablespoon chopped parsley
- Salt, only if needed
Instructions
- 1
Cook the pasta until al dente and reserve 1 cup pasta water.
- 2
Melt butter in a skillet. Add garlic and Cajun seasoning and cook for 30 seconds.
- 3
Pour in cream and simmer gently for 3 to 4 minutes.
- 4
Reduce heat to low and stir in parmesan until smooth.
- 5
Add pasta and toss, loosening with pasta water. Finish with parsley and taste before adding salt.
Helpful notes
- Cajun blends vary in salt level, so taste before seasoning further.
- Keep the cream at a gentle simmer rather than a hard boil.
Use penne, rigatoni or fettuccine. Roasted peppers or spinach make easy additions.
Storage and reheating
Refrigerate for up to 3 days and reheat over low heat with a splash of water.
