Creamy Parmesan Pea Pasta Sauce
Ingredients
- 12 oz (340 g) pasta
- 1 tablespoon butter
- 2 garlic cloves, minced
- 1 cup frozen peas
- 3/4 cup heavy cream
- 1/2 cup grated parmesan
- 1/2 teaspoon lemon zest
- 1/2 cup reserved pasta water, as needed
- Salt and black pepper, to taste
Instructions
- 1
Cook pasta until al dente, adding the peas to the pot for the final 2 minutes. Reserve pasta water and drain.
- 2
Melt butter in a skillet and cook garlic for 30 seconds.
- 3
Add cream and simmer gently for 2 to 3 minutes.
- 4
Stir in parmesan and lemon zest over low heat.
- 5
Add pasta and peas. Toss until coated, loosening with pasta water as needed. Season to taste.
Helpful notes
- Frozen peas keep this recipe quick and reliably sweet.
- Do not boil the sauce after adding parmesan.
Small shells, farfalle and penne are especially good here because they catch the peas and sauce together.
Storage and reheating
Store for up to 3 days. Reheat gently with a splash of milk or water.
