Creamy Ricotta Garlic Pasta Sauce

20 min

Ingredients

  • 12 oz (340 g) pasta
  • 1 cup whole-milk ricotta
  • 1/2 cup grated parmesan
  • 2 garlic cloves, finely grated
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 3/4 cup reserved pasta water, as needed
  • 2 tablespoons chopped basil or parsley
  • Salt and black pepper, to taste

Instructions

  1. 1

Cook pasta until al dente and reserve at least 1 cup of pasta water.

  2. 2

In a large bowl, stir together ricotta, parmesan, garlic, lemon zest, olive oil, salt and pepper.

  3. 3

Whisk in 1/3 cup hot pasta water until the ricotta mixture becomes smooth and creamy.

  4. 4

Add the hot drained pasta and toss vigorously. Add more pasta water a little at a time until glossy.

  5. 5

Fold in herbs, taste and serve immediately.

Helpful notes

  • Hot pasta water loosens the ricotta without needing heavy cream.
  • Use finely grated garlic so its flavor distributes evenly.

This is especially good with rigatoni, fusilli and shells. Add peas, spinach or roasted tomatoes if you want more vegetables.

Storage and reheating

Store for up to 3 days. Reheat gently; ricotta sauces can dry out if overheated.
