Creamy Spinach Parmesan Pasta Sauce
Ingredients
- 12 oz (340 g) pasta
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 5 oz (140 g) baby spinach
- 3/4 cup heavy cream
- 1/2 cup finely grated parmesan
- 1/4 teaspoon nutmeg, optional
- 1/2 cup reserved pasta water, as needed
- Salt and black pepper, to taste
Instructions
- 1
Cook pasta until al dente and reserve 1 cup pasta water.
- 2
Heat olive oil in a skillet and cook garlic for 30 seconds. Add spinach and cook until just wilted.
- 3
Pour in cream and bring to a gentle simmer for 2 to 3 minutes.
- 4
Lower the heat and stir in parmesan and nutmeg until smooth.
- 5
Add pasta and toss. Use small splashes of pasta water until the sauce coats every piece. Season to taste.
Helpful notes
- Wilt the spinach only until tender so it keeps its fresh color.
- Keep the heat low after adding parmesan.
Serve with penne, rigatoni or fettuccine. A little lemon zest on top balances the richness.
Storage and reheating
Store for up to 3 days and reheat slowly with a splash of milk or water.
