Creamy Tomato Pasta Sauce
Ingredients
- 12 oz (340 g) pasta
- 1 tablespoon olive oil
- 3 garlic cloves, finely minced
- 3 tablespoons tomato paste
- 3/4 cup (180 ml) heavy cream
- 1/2 cup (50 g) finely grated parmesan
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes, optional
- Salt and black pepper, to taste
- Fresh basil, for serving
Instructions
- 1
Cook the pasta in well-salted water until al dente. Reserve at least 1/2 cup pasta water before draining.
- 2
Heat the olive oil in a wide skillet over medium-low heat. Add the garlic and cook for about 30 seconds, just until fragrant.
- 3
Add the tomato paste and cook for about 2 minutes, stirring often, until it darkens slightly.
- 4
Stir in the cream, oregano and red pepper flakes. Bring to a gentle simmer and cook for 3 to 4 minutes.
- 5
Lower the heat and stir in the parmesan until the sauce is smooth.
- 6
Add the pasta and toss well. Use reserved pasta water a little at a time until the sauce is glossy and coats the pasta.
- 7
Season with salt and black pepper to taste. Finish with fresh basil and extra parmesan if desired.
Helpful notes
- Cooking the tomato paste briefly before adding cream helps deepen its flavor.
- Keep the sauce at a gentle simmer after the cream is added.
Serving ideas
Serve with rigatoni, penne or another pasta shape that holds a creamy sauce well. A crisp green salad or roasted vegetables work well on the side.
Storage and reheating
Refrigerate leftovers promptly in a covered container. Reheat gently over low heat with a small splash of water or milk to help restore the sauce.
