15-Minute Creamy Garlic Pasta Sauce
Ingredients
- 12 oz (340 g) pasta
- 2 tablespoons butter
- 4 garlic cloves, finely minced
- 3/4 cup (180 ml) heavy cream
- 3/4 cup (75 g) finely grated parmesan
- 1/2 cup (120 ml) reserved pasta water, as needed
- 1/4 teaspoon black pepper
- Salt, to taste
- Chopped parsley, optional
Instructions
- 1
Cook the pasta in well-salted water until al dente. Reserve at least 1/2 cup pasta water before draining.
- 2
Melt the butter in a wide skillet over medium-low heat. Add the garlic and cook just until fragrant, about 30 to 60 seconds, without browning.
- 3
Pour in the cream and bring it to a gentle simmer for 2 to 3 minutes.
- 4
Lower the heat. Stir in the parmesan a little at a time until the sauce is smooth.
- 5
Add the drained pasta and toss well. Loosen with small splashes of reserved pasta water until the sauce coats the pasta.
- 6
Season with black pepper and salt if needed. Serve immediately with parsley or extra parmesan.
Helpful notes
- Keep the heat low when adding parmesan to reduce the chance of a grainy sauce.
- Add pasta water gradually; you may not need the full 1/2 cup.
Serving ideas
Pair this sauce with roasted broccoli, sautéed spinach, grilled chicken or a simple green salad.
Storage and reheating
Cream-based pasta sauces are best served immediately. If you have leftovers, refrigerate them promptly in a covered container and reheat gently, adding a small splash of water or milk to loosen the sauce.
