15-Minute Lemon Garlic Herb Pasta Sauce
Ingredients
- 12 oz (340 g) linguine
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 garlic cloves, minced
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 cup finely grated parmesan
- 1/3 cup chopped parsley and basil
- 1/2 cup reserved pasta water, as needed
- Salt and black pepper, to taste
Instructions
- 1
Cook the pasta until al dente. Reserve 1 cup pasta water before draining.
- 2
Heat olive oil and butter in a skillet over medium-low heat. Add garlic and cook for about 30 seconds.
- 3
Add lemon zest and 1/4 cup pasta water. Stir until lightly emulsified.
- 4
Add the pasta and herbs, then toss well. Remove from heat and add parmesan and lemon juice.
- 5
Loosen with more pasta water as needed. Season with salt and black pepper and serve right away.
Helpful notes
- Add lemon juice off the heat to keep its flavor fresh.
- A mix of parsley and basil gives the sauce more dimension than one herb alone.
Pair with asparagus, peas, roasted zucchini or a simple green salad. It also works well as a side for grilled vegetables.
Storage and reheating
Store for up to 3 days. Reheat over low heat with a spoonful of water and finish with a fresh squeeze of lemon.
