Butternut Squash Sage Pasta Sauce
Ingredients
- 3 cups peeled cubed butternut squash
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 garlic cloves
- 6 fresh sage leaves
- 1/2 cup grated parmesan
- 3/4 cup vegetable broth
- 1/2 cup reserved pasta water, as needed
- Salt and black pepper, to taste
Instructions
- 1
Boil or steam the squash until very tender, 12 to 15 minutes.
- 2
Melt butter with olive oil in a skillet. Add sage and garlic and cook until fragrant.
- 3
Blend cooked squash with broth, half the sage-garlic butter and parmesan until smooth.
- 4
Return the sauce to the skillet and warm gently.
- 5
Add cooked pasta and toss, using pasta water to adjust the consistency. Season to taste.
Helpful notes
- Fresh sage is strong; a small amount is enough.
- Blend until completely smooth for a creamy texture without heavy cream.
Rigatoni, shells and pappardelle all work well. Toasted pumpkin seeds make a good crunchy topping.
Storage
Refrigerate for up to 4 days or freeze the sauce for up to 2 months.
