- 2 large roasted red peppers, peeled
- 1/2 cup canned white beans, rinsed
- 2 garlic cloves
- 2 tablespoons olive oil
- 1/2 cup vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon lemon juice
- Salt and black pepper, to taste
Instructions
- 1
Blend roasted peppers, white beans, garlic, olive oil and broth until smooth.
- 2
Pour into a saucepan and bring to a gentle simmer.
- 3
Stir in smoked paprika and cook for 8 to 10 minutes.
- 4
Add lemon juice and season with salt and pepper.
- 5
Toss with hot pasta, adding pasta water if needed.
Helpful notes
- White beans add body without making the sauce taste strongly of beans.
- Use jarred roasted peppers for a faster version; drain them well first.
Serve with penne, fusilli or spaghetti. Add parsley or basil before serving.
Storage
Refrigerate for up to 4 days or freeze for up to 2 months.
