Easy Arrabbiata Pasta Sauce
Ingredients
- 2 tablespoons olive oil
- 4 garlic cloves, thinly sliced
- 1 to 1 1/2 teaspoons red pepper flakes
- 1 can (28 oz / 800 g) crushed tomatoes
- 1/2 teaspoon dried oregano
- Salt, to taste
- 2 tablespoons chopped parsley
- Parmesan, optional
Instructions
- 1
Heat olive oil over medium-low heat. Add garlic and chili flakes and cook for about 30 seconds.
- 2
Add crushed tomatoes and oregano. Stir and bring to a gentle simmer.
- 3
Cook uncovered for 20 minutes, stirring occasionally.
- 4
Season with salt and stir in parsley.
- 5
Toss with hot pasta and finish with parmesan if desired.
Helpful notes
- Adjust the chili flakes to your preferred heat level.
- Do not brown the garlic; it can make the sauce bitter.
Penne is traditional and especially good at carrying the spicy tomato sauce, but any sturdy pasta works.
Storage
Refrigerate up to 5 days or freeze for up to 3 months.
