Roasted Tomato Garlic Pasta Sauce
Ingredients
- 2 lb (900 g) ripe tomatoes, halved
- 6 garlic cloves
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- Black pepper, to taste
- 1/3 cup fresh basil
- 1/3 cup grated parmesan, optional
Instructions
- 1
Heat the oven to 425°F (220°C). Arrange tomatoes and garlic on a rimmed sheet pan.
- 2
Drizzle with olive oil and season with oregano, salt and pepper. Roast for 30 to 35 minutes until softened and browned at the edges.
- 3
Transfer the tomatoes, garlic and pan juices to a blender or food processor. Blend to your preferred texture.
- 4
Pour into a saucepan and simmer for 5 minutes. Stir in basil.
- 5
Taste and adjust seasoning. Add parmesan if desired.
Helpful notes
- Use ripe tomatoes for the best balance of sweetness and acidity.
- Keep the flavorful roasting juices; they belong in the sauce.
Toss with rigatoni, spaghetti or gnocchi. The sauce is also excellent spooned over roasted vegetables.
Storage and freezing
Refrigerate for 5 days or freeze for up to 3 months.
