Mushroom Spinach Pasta Sauce
Ingredients
- 12 oz (340 g) pasta
- 2 tablespoons olive oil
- 10 oz (280 g) mushrooms, sliced
- 3 garlic cloves, minced
- 5 oz (140 g) baby spinach
- 1/2 cup grated parmesan
- 1/2 cup reserved pasta water, as needed
- 1 teaspoon thyme leaves
- Salt and black pepper, to taste
Instructions
- 1
Cook pasta until al dente and reserve 1 cup pasta water.
- 2
Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook until deeply browned.
- 3
Add garlic and thyme and cook for 30 seconds. Add spinach and wilt briefly.
- 4
Add pasta and 1/3 cup pasta water. Toss until the pan juices coat the noodles.
- 5
Remove from heat, add parmesan and adjust the texture with more pasta water.
Helpful notes
- Let mushrooms brown before stirring too often; color adds flavor.
- Add spinach only at the end so it stays fresh and green.
Use fettuccine, penne or rigatoni. A squeeze of lemon is a good finishing touch.
Storage and reheating
Store for up to 3 days and reheat gently.
