Pea Basil Parmesan Pasta Sauce
Ingredients
- 2 cups frozen peas
- 1 packed cup fresh basil
- 1/2 cup grated parmesan
- 2 tablespoons olive oil
- 1 small garlic clove
- 1 tablespoon lemon juice
- 1/2 cup reserved pasta water, as needed
- Salt and black pepper, to taste
- 12 oz (340 g) pasta
Instructions
- 1
Cook the peas in boiling salted water for 2 minutes. Scoop them out and use the same water for the pasta.
- 2
Blend peas, basil, parmesan, olive oil, garlic and lemon juice until mostly smooth.
- 3
Cook pasta until al dente and reserve 1 cup pasta water.
- 4
Warm the pea sauce gently in a skillet without boiling.
- 5
Add pasta and toss, loosening with pasta water until creamy. Season to taste.
Helpful notes
- Do not overheat the finished sauce or the green color can dull.
- A small amount of lemon keeps the peas tasting fresh.
Fusilli and shells catch the thick green sauce especially well.
Storage
Refrigerate for up to 3 days in an airtight container.
