Tomato Olive Caper Pasta Sauce
Ingredients
- 2 tablespoons olive oil
- 3 garlic cloves, sliced
- 1 can (28 oz / 800 g) crushed tomatoes
- 1/2 cup sliced Kalamata olives
- 2 tablespoons capers, drained
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 2 tablespoons chopped parsley
- Black pepper, to taste
Instructions
- 1
Heat olive oil over medium-low heat and cook garlic for 30 seconds.
- 2
Add tomatoes, oregano and red pepper flakes. Simmer for 15 minutes.
- 3
Stir in olives and capers and cook for another 5 minutes.
- 4
Taste before adding salt; the olives and capers may provide enough.
- 5
Finish with parsley and black pepper. Toss with pasta and serve.
Helpful notes
- Taste before salting because olives and capers are naturally salty.
- Rinse capers briefly if you prefer a milder briny flavor.
Spaghetti, linguine and penne are all good choices. Add tuna only if you want to turn it into a different meal.
Storage
Refrigerate for up to 5 days.
