Tomato Parmesan Pasta Sauce

30 min

Ingredients

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 can (28 oz / 800 g) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 cup finely grated parmesan
  • 1/2 cup reserved pasta water, as needed
  • Fresh basil
  • Salt and black pepper, to taste

Instructions

  1. 1

Heat olive oil in a saucepan. Add garlic and cook for 30 seconds.

  2. 2

Add tomatoes and oregano. Simmer gently for 18 to 20 minutes.

  3. 3

Add cooked pasta directly to the sauce with a small splash of pasta water.

  4. 4

Remove from heat and stir in parmesan gradually while tossing.

  5. 5

Season to taste and finish with basil.

Helpful notes

  • Add parmesan off the heat so it melts smoothly.
  • Use pasta water only as needed; the tomato sauce should remain thick enough to coat the pasta.

Serve with rigatoni, penne or spaghetti and a green salad.

Storage and reheating

Refrigerate for up to 4 days. Reheat gently, adding a spoonful of water if the sauce thickens.
