Vegan Lentil Bolognese-Style Pasta Sauce
Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 carrot, finely diced
- 1 celery stalk, finely diced
- 3 garlic cloves, minced
- 1 can (28 oz / 800 g) crushed tomatoes
- 1 1/2 cups cooked brown or green lentils
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
Instructions
- 1
Heat olive oil in a saucepan. Cook onion, carrot and celery for 7 to 8 minutes until soft.
- 2
Add garlic and cook for 30 seconds.
- 3
Add tomatoes, lentils, oregano and thyme. Stir well.
- 4
Simmer uncovered for 25 minutes, stirring occasionally.
- 5
Season with salt and pepper. Add a splash of water if the sauce becomes too thick.
Helpful notes
- Cooked lentils make this much faster than starting with dry lentils.
- Finely diced vegetables melt into the sauce as it simmers.
Serve with spaghetti, rigatoni or whole-grain pasta.
Storage and freezing
Refrigerate for up to 5 days or freeze for up to 3 months.
